This is a lot easier to make than the regular stuffed green peppers. My husband just loves it this way.

  1. In a skillet, brown beef. Drain.
  2. Transfer to a greased 2-quart casserole dish.
  3. Add the next 8 ingredients.
  4. Cover and bake at 350°F for 1 hour or until rice is tender.
  5. Uncover and sprinkle with the cheese.
  6. Return to the oven until cheese melts, about 5 minutes.

We love this recipe. I use diced tomatoes and tomato sauce instead of the stewed tomatoes and water. I have also use brown minute rice in place of the long grain rice. I see other ideas posted that I may also try. So easy and taste great!!

5 5! This stuff is great. I used a box of Zatarain's Black Beans and Rice instead of the plain rice and's a keeper! Also, I sauted the onions in butter and paprika before adding the ground beef. I will never make it in the traditional style again. Thank you taillights!

very yummy! i added extra green pepper and used a can of diced tomatoes instead of stewed.
