I love this italian salad. It is easy, and delicious!
- 1⁄2 lb parmigiano-reggiano cheese
- 1 roasted red pepper, cut into strips
- 2 ounces green olives, chopped
- 1 cup chopped celery heart
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- salt and pepper
- Cut cheese into slivers.
- Combine all ingredients, toss a few times and serve!
2 steps--What could be easier? I used kalamata olives in place of the green and served this on a bed a torn romaine. Thanks!
