    This is my quickie "copycat" of the insalata caprese at Fleming's steakhouse. No, it's not traditional, but it IS delicious! Could also be considered vegetarian, depending on the person's dairy product preferences.

    Directions:

      Set out tomatoes and cheese (I like them to be room temperature, just personal preference).

      Stir balsamic vinegar and sugar together in a small, heavy saucepan. (I'm sure you could substitute some other form of sweetener, but I've never tried it).

      Bring to boiling over med-high heat; simmer for 10 minutes, stirring occasionally.

      While reducing vinegar, cut up other ingredients and arrange nicely on a plate.
    5. 5
      Drizzle with balsamic reduction.
    6. 6
      Serve immediately and enjoy!
