Inlagd Sill - Scandinavian Pickled Herring

Overnight soaking not included in preparation time. From the Minnesota Scandinavian chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947.


  1. Soak herring overnight.
  2. Drain; skin and remove all bones.
  3. Mix vinegar, pepper, sugar, crushed peppercorns and pour over herring.
  4. If the vinegar is very strong, dilute with water.
  5. Let stand for a few hours.
  6. When serving, cut into 1/2 inch wide strips diagonally across fish and arrange on a dish to look like a whole fillet.
  7. Garnish with minced onion.
