  • Combine the honey, peanut butter, vinegar,salt and pepper and stir until well mixed.
  • last add the shredded vegetables and fruit.
  • mix again so that the flavours blend.
  • refrigerate for at least 1 hour.
  • serve chilled.
  • does not include the1 hour chilling time.

  1. DH liked this more than I did but it was an interesting taste to try for me too. I used crushed red pepper and actually might use more next time. The heat came after the sweet was almost gone and stayed with you. The shredded fruit and veggies were a good texture and altho it smelled vinegary, I didn't have that taste. I used all four suggested fruits/veggies. Thanks for a fun one to try. Made for ZWT6 by a Looney Spoon Phoodie.
     
  2. I made a half recipe of this salad for brunch. We were really divided on it, but with mostly positive comments. DH thought the honey was too prominent, while I thought the peanut butter was. But our toddler gobbled it up without complaint! :) We both LOVED the spice which came from cayenne, as I wasn't sure if the red pepper called for was crushed, ground or bell peppers. I decided against the bell pepper because the amount seemed too small for those and I thought DH would prefer the cayenne over large pieces of crushed red pepper. Unfortunately, I didn't have pear or cucumber on hand so I used granny smith apples and carrots only. Thanks for posting this super easy salad, Brenda! <p>I have 5 kids, 12 grandkids and now have 6 great grandchildren. I don't get to see them as much as I would like. I love to garden and I am also a broadcaster on radio and the net.. Recently married to an American although remarriage is something I thought I would never do again. He traveled 3000 miles with his cat to come to marry me. <br /><br />I owned my own craft store for 10 years but gave that up after a huge craft discount depot opened just 4 blocks from me. I used to teach 6 days a week; crafts like quilting, dried wreaths, Christmas ornaments, etc.</p> <p>I &nbsp;had open heart surgery and recovered nicely.I am not the best patient in the world as I want to get going and get back to work and my life as I knew it.</p> <p>I have retired and do help out at a soup kitchen for the homeless and 1 morning a week I make French Toast at a community center that supplies 26 schools with free snacks and sandwiches&nbsp; for the kids <br />I have been knitting blankets for Blankets for Canada an organization that helps the&nbsp;homeless keep &nbsp;a little bit warmer. I also knit for many different charities that supply kids with warm clothes.
