Delicious make ahead! Used 1 pound of ground beef, omitted the salt, and put about 4 spinach leaves in each with the cheese/prosciutto. I made mine a bit too thick-- should have flattened them more. And after looking at my photo realize that I forgot to put the Parmesan on-next time will. Thank you Deb for sharing.
Spectacular! That's not a word that I typically use in reviews, but this dish is really terrific. I made the meatloaf almost exactly as listed (I used a pound of beef) and used your cheesestring shortcut! I could not find spinach fettuccine but the regular kind worked just fine. Another great part of this dish is that I made the meatloaves ahead of time and just had to pop them in the oven at dinnertime. We enjoyed this with a fresh salad. When da hubs says it's a keeper, then who am I to argue. I couldn't get my hands on the spinach fettuccine, so subbed linguini instead. Delicious! Made for Everyday Holiday Tag Game. :)
Like other reviewers, I used the string cheese trick.....much easier! Since I didn't have spinach fettuccine, I put some spinach leaves in between the mozzarella and prosciutto. I used shaved parmesan cheese.....also shaved a bit into the fettuccine. This was a very enjoyable little meat loaf.....sort of like a really big stuffed meatball! Thanks for sharing. Made this with the following:: 2 sticks string cheese, I bumped up the spinach fetticuine to 12 ounces, and left out the salt. Really enjoyable meal, and the spinach flavor gave a nice different flavor to this meal. The prep and cooking times were right on the dot, as it made for a nice quck meal. Made for Holiday tag.
WOW, one big beautiful meatball! well, almost a meatball. I made this using homemade sauce from the freezer and panchetta (closest thing I had to prosciutto) and it's a keeper for sure. Deb, you have some great recipes!
