A very easy and tasy soup written down by my dd.

  1. Heat oil in large pot.
  2. Saute onion, chilli, garlic and curry powder until softened.
  3. Add vegetables and give a stir to coat.
  4. Add stock and lentils.
  5. Bring to boil.
  6. Lower heat and simmer soup covered until vegetables are soft.
  7. Blend and serve.

FANTASTIC!! so easy and delicious and thick. I did only put 2 TEASPOONS of curry powder rather than two tablespoons and I also used 1 1/2 tsp of Sambel Olek instead of the chili. My partner and I loved this and it was a very hearty and warming meal for a cold winter's night. Thanks
