Indian Spiced Rice

"Taken from my "In Good Taste" cookbook (El Dorado Service League). I have not tried this dish; however, it sounds really delicious. I love the idea of the browned onions, cashews and raisins served atop the rice and green peas."

  • In a skillet, heat oil. Add onions and saute until brown. Remove with slotted spoon and set aside. In same skillet, fry cashews until brown, remove with slotted spoon and drain. Using same skillet, add raisins and cook until puffy; remove and drain.
  • To skillet, add rice and saute until golden brown. Add water and next 7 ingredients. Heat to boiling. Reduce heat, cover and cook 20 minutes on top of stove until liquid is absorbed. Keep warm. Stir in peas. Arrange rice on a platter and top with onions, nuts and raisins.

  1. Excellent rice! The addition of the nuts made this so flavourful. I did scale back the amount of peas though as I had only a handful left, but I didn't miss them. The spice amount was perfect for us and we really enjoyed this simple to make dish. Thanks for posting! Made for ZWT #8 :)
