directions

  • melt butter.
  • add chilies and onions.
  • cook until almost golden.
  • beat up eggs
  • pour over chilies and onions
  • salt and pepper.
  • add curry leaf if you have it and like it
  • stir until set.

  1. I loved these scrambled eggs they were awesome, so much flavorful and nothing was overpowering, you could taste all the different flavors in the eggs. I didn't use curry leaves didn't have any, so I added a little ground curry to the eggs. Thank you for sharing a recipe that I will make again.   2. What wonderfull memories this bought to me of the eggs my late dad often made. I used the ghee and fried off 1/2 teaspoon of hot madrass curry powder till fragrant and then proceded with the recipe as written and served with buttereed toast.   3. I really enjoyed this for breakfast today! It was spicy and savoury and I think I'll cook with ghee more often. Curry leaves are strange if you're not used to them. The taste really bad, then really good and the aftertaste is really bad! That's tasting one raw. I didn't really taste it in the eggs because it's such a small amount. The recipe doesn't say when to add the eggs so I just stirred them up and added them right before the salt and pepper. Made for ZWT8. Thanks Dee! :)
     
  4. I made these for breakfast this morning and really enjoyed them. I used green onions, so I just sauteed the peppers in the butter and then added the eggs, onions and seasoning to them. I scaled this back for 1 serving and went very lightly with the peppers, don't like my mouth burning. Served it with biscuit and grapefruit for a wonderful filling breakfast.
