  • Peel the cucumber and slice as thin as you can, peel and cut the onions as thin as you can. Add both to a serving dish.
  • Sprinkle with salt and add the juice - stir to combine.
  • Cover and chill for 1 hour.

  1. After making this salad three times and following the advice of other reviewers, the measurements I thought tasted best were: 1 1/2 tsp honey, 1 T fresh lemon juice, 1/2 T chopped fresh mint, and 1 tsp cumin. I also thought something was missing and added a pinch of kosher salt. It did the trick by enhancing the other flavors and adding perfect balance. (I later saw another reviewer had also discovered this. :) ) It does taste amazing when left to sit in the fridge a bit (but don't mix into cucumbers til ready to serve due to water separation). I didn't find I needed the entire amount of dressing--just stirred in what I thought would be a good amount. Awesome easy salad to go with our spicy chicken curry!
     
  2. The perfect accompaniment for every Indian meal I cook! DH doesn't favor the onions, the cucumbers are the standout here anyway. In restaurants they sometimes add carrots and chili peppers to this as well.

  5. This is a refreshing and very simple side dish. I've never had lemon juice on my cucumbers before. I added a little zest for color. I made this for Zaar World Tour 8 for the Bistro Babes team

I have a severe egg allergy and am lactose intolerant, I&nbsp;enjoy working out ways to still enjoy food minus eggs and milk. I have been married for 14 years and have one very happy and well fed hubby.<br />My goal is to try one new recipe a week, for the past 8 years have achieved this. &nbsp;I own over 300 cookbooks, but no longer purchase them - but regularly print out recipes to try later.<br />When I am not cooking, I am busy household of 6 and going to the gym (to work off the wonderful calories I consumed the day before) and helping at school and church.<br />My philosophy in life is: as we have to eat, we may as well eat well.</p>
