Incredibly Moist Apple Bread

"I was first introduced to this wonderful Apple Bread from a co-worker more than 20 years ago! I just recently begged her to bring me the recipe so I could make it. She said she has kept it "posted" on her refrigerator for all of these years and still makes it all the time. I hope you enjoy it as much as I do."

  • Heat over to 350 and grease and flour loaf pan.
  • Cream together the 1 cup sugar, shortening, eggs and vanilla.
  • Stir in flour, baking powder, baking soda and salt until smooth.
  • Stir in apples and nuts and spread in pan.
  • Mix the 1 tablespoon sugar and cinnamon; sprinkle evenly over batter.
  • Bake until toothpick inserted in center comes out clean, about 50-60 minutes.
  • Immediately remove from pan; cool bread completely before slicing.
  • Store tightly covered. Makes 1 loaf.
  • Note: Unbleached flour can be used in this recipe; if using self-rising flour, omit baking powder, baking soda and salt.

  1. Can you use parchment paper instead of flouring pan? I have never used parchment paper.

  1. Don't be fooled by the texture of the batter; this bread is extremely moist and delicious. I have many requests for the recipe. I prefer making it without the nuts as my daughter is allergic to them.
     
  2. I loved this Apple bread recipe ! I used butter instead of shortening, and I grated the apples. And I used a bundt pan. It was really good, my family loved it. I am keeping this recipe!
     
  3. This recipe did not work for me (I used butter softened) it came out like cookie dough...I'm trying to salvage it by making cookies now- I don't recommend
     
  4. Sorry, have to disagree. This was awful. The dough was too stiff -- like cookie dough, not quick bread dough -- and by the time the centre was cooked, the outside was overdone. Perhaps if the apple was shredded it would work better ...
     
  5. Loved this recipe. So easy and so tasty. I will probably put in smaller load pan next time to get taller loaf!!!

Tweaks

  1. I used the original recipe but added 1/2 teaspoon of cinnamon to the dry ingredients. I also tried making the bread with cubed apples and grated apples. Both breads were equally moist, but I prefer the one with apple cubes because they have an excellent flavor.
     
  2. I used that same tweaks as suggested (butter instead of shortening and grated apple) but I also used brown sugar instead of white sugar. Everyone loved it, multiple, multiple compliments.... delish and very moist!
     
  3. Ok, this is a good recipe, but I made a couple of adjustments. I sauteed the apple pieces in two tablespoons of butter with some cinnamon sugar before adding them to the batter, used two smaller loaf tins instead of a large tin, and baked for 50 min. OH MY GOODNESS! They were perfectly baked with a browned crust and a moist inner breading. Yum! Note: I used one large, rippening pacific rose apple.
