Incredible Edibles Christmas Applesauce

- 2 kg apples, cored and chopped (Macintosh)
- 1 cinnamon stick, ground to taste
directions
- Core and chop the apples, leaving the red skin on.
- Place in a large pot with a small amount of water, about 4 ounces and cook down on medium heat till the apples are soft and mushy, occasionally stirring so they wont burn.
- When soft, take out and strain through a large stainer separating the skin from the sauce. Take a spoon and mash down the apples so that all the sauce will be reserved.
- Discard the skins.
- Refrigerate the applesauce for an hour then enjoy--the natural sweetness will be there and no sugar.
