Cheesy Broccoli Soup that I got from meeting.

- 4 cups water
- 12 ounces frozen hash browns
- 1 cup celery, chopped
- 1 cup carrot, chopped
- 4 cups broccoli, chopped
- 29 ounces chicken broth
- 1 teaspoon salt
- 1⁄2 teaspoon pepper (optional)
- 3 tablespoons flour
- 2 cups skim milk
- 6 ounces Velveeta reduced fat cheese product
- In a large pot, combine water, potatoes, vegetables, broth, salt and pepper. Bring to a boil and simmer until the vegetables are tender (15-20 min). In a separate bowl, blend flower and mild. Slowly add flower/milk mix to the large pot. Stir constantly until soup thickens. Add cheese cubes and stir until smooth.
I think that I would have liked this more without the hash browns. I didn't have Cheeze Wizz so used mild cheddar that melted well. I enjoy the freshness of the broccoli and it made a nice lighter dinner this evening with fresh made bread. Made for PAC, Spring 2014.
