OK used beef and pork for meatballs. Used 6 cups chicken stock and 4 cups beef stock. Couldn't find orzo so I used tiny shells. Ran out of pepper but fantastic recipe !!! I have never had this soup before and it aws awesome since it's cold and rainy outside.
Delicious soup! I unfortunately discovered I had no carrots, so to add color I used red bell pepper....these were pretty, but I think the soup would have tasted better with the original carrots! I ended up with a bit more meatballs than called for, but used the specified amounts of meat. Delicious! Thanks for sharing!!
Made this for our lunch the other day and it was DELICIOUS! I cut the recipe in half and followed the instructions adding some diced zucchini like another reviewer because I needed to use it up. Definately a keeper. Made for Zaar Cookbook Tag.
I'm not so big on spinach, but cut this recipe in half & made it particularly for my other half ~ I had a small bowl & he had a large one, then took the final portion to work for lunch! Such a good and warming soup. I did not make the meatballs, which I am sure would have been wonderful, because I had a lot of Italian sausage links I needed to use. I chunked up the sausage and browned it, and then added it with the broth. I also added some diced zucchini, which worked well with the other ingredients. I had only regular spinach, so sliced it before adding it. If you make the meatballs ahead of time, this is a very quick soup to make for dinner.
