Impossibly Delicious and Kinda Healthy Brownies

Wish I Could Cook's Note:

These moist, rich chocolately brownies are wonderful. But they are made with whole wheat flour, baby food, and Splenda, so they are on the healthy end of the brownie spectrum. I won't call them a health food, but you don't have to feel too guilty while you enjoy one (or two...) I've used 100% Splenda, and they still turn out great!

• Cook Time: 25 mins

Ingredients:

Serves: 16

Yield: 16.0 pieces

• 4 ounces baby food (apple or plum or prune works best)
• 2 tablespoons margarine
• 2 teaspoons vanilla
• ½ cup unsweetened cocoa
• ½ cup sugar
• ½ cup Splenda sugar substitute
• ¼ teaspoon salt
• 2 eggs
• ½ cup whole wheat flour (can use whole wheat pastry flour)
• ½ cup chocolate chips
• ½ cup pecans or ½ cup walnuts

Directions:

1. Preheat oven to 350.
2. Combine baby food, margarine, vanilla and cocoa until well blended.
3. Add sugar, Splenda and salt.
4. Add eggs one at a time.
5. Mix in flour, chocolate chips and chopped pecans or walnuts until just mixed. (Don't overmix.).
6. Pour into 8x8 greased pan.
7. Bake for 25 minutes.
