This was so popular in my household I've made it twice in four days! I modified the recipe to accommodate our healthy diet--used egg substitute, Splenda, and omitted the margarine. It wasn't missed. I mixed this up in my blender and just threw it in the oven--so easy! This recipe also doubles easily. I will be making this again and again...thanks so much for posting!

This is my favorite pumpkin pie recipe. It is so easy to make! There is no rolling out a bottom crust. I mix mine up in my food processor. I also use this recipe to make little impossible pumpkin tarts. I just cut the baking time down. Bite sized yummies!
I am not sure what the other person didn't like about this recipe, but I surely loved mine. When I make anything pumpkin I only use pumpkin pie spice. I find that sometimes the spices over powers the pumpkin flavor, in my opinion. Thanks for sharing this recipe. I looked high and low for the recipe and I am glad you had it posted.
