Found this recipe in an old cookbook that belonged to my wife's aunt.
- 4 eggs
- 1⁄2 cup margarine
- 1⁄2 cup flour
- 2 cups milk
- 1 cup sugar
- 1 cup coconut
- 2 teaspoons vanilla
- 1 pinch nutmeg
- Mix all ingredients in a blender or with a mixer.
- Pour mixture into a 10 inch pie plate.
- Bake 350F approximately 1 hour or until centre is firm.
- NOTE: This pie makes its own crust. Very good with ice cream.
I put the coconut in a mini chopper for a finer texture, but otherwise followed the recipe. The custard part of the pie is excellent, but the top layer - crust- was a tad dry. Thank you for sharing the recipe! :-)
My mother made this for years. It is YUMMY served warm with ice cream. Easy to make too, as you don't need to fuss making a pastry crust, because it makes its own. It is good cold too. THanks for posting this Bluenoser!
I have been making this pie for about 40 years. It is very good and easy.My recipe only calls for 2 Tablespoons of butter and I add more coconut.Check after 40 min.by sticking a knife in center,if it comes out clean, its done.Refrigerate leftovers.
