  • Preheat oven to 400 degrees Fahrenheit.
  • Lightly grease a pie plate.
  • Place bacon, onion, and cheese in pie plate.
  • Beat remaining ingredients together until smooth.
  • Pour over bacon mixture in pie plate.
  • Bake 35 to 40 minutes.
  • Let stand 15 minutes.

Rating this recipe is tough because it does have good flavor, but the recipe, as written, has problems. 1st, 2 slices of bacon would definitely not be enough in this pie, so I used 5, which I diced and sauted with 1 medium diced onion. I put both in the bottom of the pie plate with the cup of cheese. Then I made the Bisquick mixture as the recipe stated, but as I tried to pour it into the pie plate, I realized it was about 2 times the amount you actually need for 1 pie. It flowed over my pie plate and made a huge mess and at this point, I almost threw the whole thing out! I did salvage the pie and poured the extra Bisquick mixture down the drain. I cooked the pie on a pizza pan (to keep my oven from getting messy) for about 28 minutes, instead of the 40 minutes the recipe calls for. I know I changed this recipe a lot, but it wouldn't have worked otherwise. I will make it again (with the above mentioned changes) because the flavor is good and it is an expensive weeknight meal.

Most of my recipes are dairy free since I discovered many years ago that I am lactose intolerant. While I have had to give up some much-loved recipes, we have discovered that most can be modified to accommodate the changes to our diet. Most of my recipes say dairy free but there are a few from my childhood that may have dairy! I also have an intolerance to MSG so we spend a lot of time reading labels. Usually, it is just easier to cook from scratch, so we don't use many pre-made foods from the grocery store.</p> I like recipes I can make with minimal ingredients, real food I have in my kitchen, that are also easy to make!
