Imitation Crab (Surimi) Salad

If you're short of time and still want something nice for lunch, try this salad. It is better when chilled for an hour or so but can be eaten immediately. It keeps well in the fridge for a couple of days. Also nice as an appetizer on crackers or as a cucumber stuffing.

Easy enough to make but I thought the egg was too much and I had used 12 oz of the imitation crab as it was (just because that was the package sizr I had on hand). It tasted more like egg salad than anything. I may try it again with much less egg.

Directions

  1. Mash the eggs.
  2. Flake and cut the surimi.
  3. Mix eggs, surimi, mayonnaise, lemon juice, dill weed, salt and pepper.
  4. Chill.
