We love this! I use a 12 oz pkg of rotelle pasta and I saute the veggies and add about 1/2 c diced red bell pepper. It divides between 2 8" pans and freezes like a dream for OAMC cooking.
This was delicious! I sauteed the veggies a little while the pasta boiled to save time and added a little lemon pepper. Definitely will have again.
Delicious recipe! Very basic ingredients that have a wonderful flavor when combined. The ability to prep ahead of time, and yummy leftovers have made this a quick favorite in my home.
Also, I enjoy the flexibility. Add a diced jalepeno for kick, or shrimp for additional meat, or any other veggies you can find. This will definitely be a frequent dinner for us!
This was really good. I deviated from the recipe some, included bell peppers like another reviewer suggested. I'm not sure if I added bread crumbs or dried parsley but I know that the richer flavors in this bake would probably mask their presence anyway. I'm not into spicy stuff so I left out the red pepper flakes. I worried that the flavors wouldn't come out but they all complemented each other very well. Gonna make it again tonight.
OK so I woulda shoulda coulda taken a photograph but there's none left. That's how good it was and so super easy. Thanks for a great time saver after a long day at work!
Have made this recipe twice so far and my family loves it! It makes a really easy frozen dinner too, which is convienient for a family on the go. The first time I made this I did exactly as recipe stated and it was really good. The second time I made this I did not have mozzarella cheese on hand, so I substituted a montery jack/colby blend. I also only added yellow squash. It was awesome! Thanks for sharing this recipe-I will be glad to have it for the upcoming cold winter nights!
I omitted the mushrooms due to personal preference. This recipe is FANTASTIC! I really loved it. Thank you! I think next time I'll add more veggies I like just for fun.
We felt this was a little lacking in the flavor department, and I would recommend sauteing the veggies, if you don't they will be rather on the crunchy side.
