this is so simple! an old syrian recipe, you can use the leftovers for soup using chicken broth
- 1⁄2 cup olive oil
- 1 large onion, chopped
- 1 cup lentils
- 1 cup white rice
- salt, pepper
- cilantro, mint,yogurt for garnish
- in pan heat oil, add onions to brown, set aside.
- combine lentils and 4 c water in a large saucepan, bring to boil, cover and simmer for 10 minutes add rice, onions in oil, salt and pepper, cover and cook 25-30 minutes.
- serve hot, warm or cold, garnish w/yogurt and herbs.
I was looking at this recipe and on the spur of the moment decided that's what I wanted for dinner tonight. I cut the recipe in half thinking there would be enough for my DDs if they wanted some too, but they weren't interested...I ate a plate of them and just couldn't resist...I had to go back and finish them off...yum yum! Glad I don't do that every day! Thanks for sharing chia!!!
Yum, I've been making lentil and rice recipes recently and this is one of the ones that really appeals to me. It's kind of plain but in the way that makes for really good comfort food. I used a mix of red and green lentils, both of which worked well. The recipe itself is really easy. Thanks Chia!
