Idiot-Proof Banana Bread

ingredients

  • 14 cup butter (or margarine)
  • 1 cup sugar (less if brown, or non-calorie sweetener to equal same sweetness)
  • 2 eggs (or egg substitute)
  • 1 lb banana (measured with skins on, about 3 large or 4 small)
  • 1 12 cups flour (cook longer if using whole wheat)
  • 1 teaspoon baking soda
  • optional

  • 12 cup chocolate chips
  • 12 cup chopped walnuts

directions

  • mash bananas with a potato masher, don't use a blender, it gets too runny. add everything else and mix well.
  • pour into a greased loaf pan (you could probably use muffins tins and bake for less time, haven't tried).
  • bake at 350f for about an hour or until knife inserted comes out clean, remember it will firm up a little while cooling.
