Icy Olive Soup

From Theresa Goble, Muscatine, OH and found in TOH Heartwarming Soups. I haven't tried this one yet but it sounds interesting. The four hours prep time is chill time.

• Cook Time: 4 hrs

Ingredients:

Servings: 6

• 2 cups plain yogurt
• 2 (10 ½ ounce) cans condensed chicken broth , undiluted
• 2 (2 ¼ ounce) cans sliced ripe olives , drained
• 1 cup coarsely chopped cucumber
• ½ cup chopped green onion
• ½ cup chopped green pepper
• ½ cup sliced pimento stuffed olive
• 1⁄8; teaspoon white pepper
• seasoned croutons (optional)

Directions:

1. Stir yogurt in a large bowl until smooth. Add chicken broth again whisking until smooth. Stir in the olives, cucumber, green onion and green pepper. Season with white pepper and refrigerate, covered, for 4 hours.
2. Garnish with croutons as you wish just before serving.
