      I am editing my review of this recipe. When making this tea, I use 8 cups of diced rhubarb, rather than the 8 stalks, plus I used 1-1/2 cups of sugar. That seem to be the perfect amount of sugar for this recipe. Also, this tea can be made using 8 cups of frozen rhubarb, and I simmered the frozen rhubarb (covered) for 2 hours. Now I can enjoy this iced tea all year round. One other thing I forgot to mention while posting my review... I found this recipe made more than 8 cups. It made (about 88 ounces) 2-quarts and 24 oz. Sugarpea, 2 other reviewers described this iced tea perfectly... refreshing, exquisted, and fantastic! Thank you sugarpea for posting this recipe. It's definitely a keeper!!

      This was so delicious! I used frozen rhubarb because fresh rhubarb isn't available this time of year, but I don't think that matters! I also think the sugar amount is just right, as I find (in previous recipes) rhubarb to be tart at times.

      I'm not going to star this recipe because I didn't have fresh mint, or any at all for that matter, and I think it would make a big difference in the taste. I did make this from very green rhubarb I got from a friend and it turned out nice. I think I will use it to make a variety of drinks. I have some fresh raspberry drippings I might use, and also some raspberry Chambord that needs to get used. Oh the drinks I can drink with this!

      I enjoyed this tart and tangy treat very much. I did cut it back for two people and used less sugar. It was quick and easy to make, with great results. This refreshing iced tea was flavorful and very pretty. I left my mint garnish in the tea and really enjoyed the mint flavor with the rhubarb. I will be making this again often. Thank you so much for sharing a new summer favorite.

      Absolutely FANTASTIC, Very refreshing, and so inexpensive. I used artificial sweetener in place of the sugar. I'll be having this in my fridge every Spring. I'll have to try it with frozen rhubarb too. That way I can enjoy it all summer long. Thanks for sharing such a wonderful recipe.

      This is exquisite. My dad brought over a sack full of rhubarb from his garden and I could hardly wait to make this tea. I increased the sugar to 1/2 cup for our tastes. This is excellent poured over a tall glass of ice. A wonderful spring drink. Thanks for posting this one.
