Iced Mint Tea

"A summer favourite, when your garden is overgrown with mint. Easy to make, and delicious! Cook time is cooling time. Original recipe from Homemakers Magazine had 1/4 cup lime juice, but after Acadia's review, I adjusted it, as I agree that is too much and is overwhelming. I think that lemon juice compliments the taste more, as well. For a vegan version, use agave nectar!"

  • 6 cups water, boiling
  • 1 12 cups mint leaves, fresh, loosely packed
  • 2 -3 tablespoons green tea leaves (4-6 tea bags)
  • 1 tablespoon lemon juice (more, to taste) or 1 tablespoon lime juice (more, to taste)
  • honey or agave nectar, to taste

directions

  • Pour boiling water over mint leaves and green tea leaves; let cool. Strain and stir in lime juice, and honey to taste.
  • Serve in a tall glass with ice cubes and a sprig of fresh mint.

  1. Mmmm....very refreshing! I didn't use green tea, just 6 bags of regular orange pekoe tea. It think next time I might use 8 for a little stronger flavor. I love how the mint felt cool on my gums. Used lemon and sweetened the pitcher with about half a T. of honey. Thanks for sharing the recipe.

  4. I followed the recipe using tea bags and fresh mint from my garden. We found that we needed to add sugar to sweeten it a bit. Made a double batch and it's all gone!
     
  5. For this recipe I had fresh pineapple mint from the garden and used Stash brand green tea. Easy, delicious and not overly sweet because you can control the amount of sugar in the beverage. Reviewed for Veg Swap/Tag July.
