Just the thing for kicking back on the deck. This is summer perfect and blender quick, Make it diabetic by using sugar free ice cream.
- 2 cups strong coffee (cold)
- 3⁄4 cup chocolate ice cream
- 1 teaspoon pure vanilla extract
- 1 cup ice cube
- 2 tablespoons Tia Maria (optional)
- Combine all the ingredients in a blender, and using the ice crush setting, whirl until the mixture is thick and frosty.
- Pour cooler immeidately into 4 decorative glasses and serve.
Made this for the DM (scaled back for one) as a treat though did not use the optional Tia Maria and she thoroughly enjoyed and felt very special with her treat. Thank you Annacia, made for Comfort Cafe.
I made a big boo boo when making this, I read several times 1 Ice Cube... now I feel like a real dill. Anyhow.... definitely not icy enough as a result. I would make it again and review it properly but unfortunately I am starting a diet tomorrow which won't let me have the ice cream or the alcohol. So my review is based on the fact that I agree with appledapply that it wasn't quite chocolately and sweet enough for me. But I may have liked it a bit more and not minded the lack of sweetness if it was icy.... because the taste was fine... just like drinking a cold cup of slightly chocolately coffee and I couldn't taste the tia maria at all. This was tasty but not quite sweet or chocolate-y enough for us, so I added about a tablespoon of sugar after tasting. (I had made exactly as directed, measuring the ingredients carefully).
