You're right, Renea', don't know why I never thought of this before, myself. I am not allergic to corn, however I have a digestive disorder that affects what kinds of foods I can eat. I have always liked rice cakes and am always looking for new ways to eat them. I believe I've seen 'butter flavor popcorn cakes' which of course, probably has corn in the ingredients, but I can see how easily one could figure that rice cakes w/some butter and salt would taste pretty good. I almost always buy the lightly salted plain rice cakes. I wonder if toasting them in a slow oven (like 200 or 250 degrees F) before tossing with butter and/or salt would improve the flavor or texture. I will try this, thanks for the idea! :)

I am always looking for new recipes so I am glad I found this site. I have a strange situation due to being allergic to Corn. Until recently I was also allergic to wheat so I am starting to put that back into my diet again. It takes time but I have been able to modify many recipes here in order to try them. They will turn out a little different sometimes but most of the time they are very good. There are only a few dishes that I cook more than once.
