I enjoyed the recipe. Simple o make, and clean uo a breeze. As my family have always preferred the hush puppies to be a bit sweeter, we added another spoon of sugar, otherwise, perfection Nita! Thank you very much! Lynn~

  1. Preheat peanut oil in deep fryer to 325 Degrees F, or until a drop of water sizzles when added to it.
  2. Combine meal, flour, salt.
  3. Add HOT water.
  4. Stir in well.
  5. Stir in buttermilk.
  6. Add beaten egg.
  7. Add and stir in peeled and chopped onion.
  8. Finally, add baking soda, mixing all well.
  9. Drop by teaspoons into hot oil.
  10. Do NOT overcrowd fryer.
  11. Cook until golden brown
  12. Drain well on a rack or UNcoated paper plate or paper towels.
  13. Serve hot!
  14. ENJOY!
