This is so easy that I can have supper ready in twenty minutes and so good that there is never a scrap leftover. My DH loves this in a sandwich but I find it so good that I don't want to cover the taste up with anything so I eat it as is. I actually am quite surprised not to see this posted as this is just wonderful. I also highly recommend that you only use fresh fish for this recipe because while it'll still be good using defrosted fish it won't taste half as delicious.
- 4 flounder fillets (or other similar thin mild flavored fish)
- 2 eggs
- 1 cup breadcrumbs
- 1 (2/3 ounce) packet dried Italian seasoning (Good Seasons)
- 1 dash salt
- 1⁄2 lemon, juice of
- 6 tablespoons mayonnaise
- 1 pinch garlic powder
- 1⁄2 teaspoon red wine vinegar
- 1⁄2 teaspoon dill
- Wash flounder fillets and remove center tough bony part if any.
- Mix breadcrumbs with seasoning packet.
- Dip fillet in breadcrumbs, then into beaten eggs, then again into breadcrumbs on both sides.
- Heat oil in frying pan over high heat. When sizzling hot add fish.
- Lower flame to medium high and continue frying until brown and crispy.
- Do the same on the other side.
- Serve with slices of lemon or tartar sauce and your favorite sides.
