Hungarian Pancakes (Palacsinta)

"A traditional treat in Hungarian households especially on Christmas morning. I make these in batches to freeze so when the grandchildren come over I use these as a bribe for them to behave. Works every time."

  • 5 eggs
  • 3 cups milk
  • 1 12 tablespoons sugar
  • 3 cups sifted flour
  • 1 teaspoon vanilla
  • Pam cooking spray, for pan (butter flavor)
  • Cheese filling

  • 1 lb pot cheese
  • 1 egg, well beaten
  • 3 -5 drops vanilla
  • 14 - 12 cup sugar

  • Beat eggs well.
  • Add milk, salt, sugar, and vanilla, Gradually add sifted flour beating until smooth a a thin batter.
  • Heat small frying pan (or crepe pan).
  • Spray lightly with Pam.
  • Pour in enough batter to cover pan with very thin layer.
  • Tilt pan with circular motion with wrist so mixture spreads eveny.
  • Pancakes cook very quicly, about 30 secs on each side.
  • Spread cheese filling, or grape jelly, or lekvar, or any jelly you like on the pancake and roll.
  • You can also eat plain with a little powdered sugar sifted on top.
  • Cheese filling: mix all ingredients well, adding sugar to taste.

  1. Thank you for reminding me about this dish that my mother always made. Yours is very similar except the cheese filling always had raisins in it. And since there is an egg in the filling my mom baked this recipe with the crapes layered on top of each other with a loose sour cream sugar topping which was then baked in the oven for about 20 minutes at 350° This resolves the raw egg in the cheese filling issue that I have in your original recipe. Thanks again I know this is a great recipe
     
  2. Hi, How much salt do you put in? that is the only ingredient that is not included.
     
  3. As a child I loveloveloved the ones with the cheese filling!!!!! I also love them with apricot filling as well!!! Boy do i miss my mothers cooking!! Have to make these more often!! :)
     
  4. thanks for posting i do the filling a little different this is how 2 egg yolks sugar to taste lemon rind or cinnamon 2 tablespoon raisins and 2 stiffly beaten egg yolks fold together these are good folks

Update: My mother, BoxO'Wine passed away on April 23, 2009 after a 2 year battle with pancreatic cancer. She was a wonderful cook and is greatly missed. My son lives in Georgia (he talks funny) and my two daughters live near me in New Jersey. I am a retired politician, but I still have a real job.
