- 100 g chickpeas, soaked overnight
- 2 garlic cloves, peeled
- 3 tablespoons tahini
- 1⁄2 lemon (juice)
- 1⁄2 teaspoon ground cumin
- 1 tablespoon water (cold)
- black pepper, freshly ground
directions
- Cook the chick peas for 2-2 1/2 hours until quite soft or pressure cook at 15 lb pressure for 20 minutes. Drain and mash with the remaining ingredients. For a smoother texture place in a liquidizer, adding a little exra water if required.
