Hummus

"I love hummus and always have, but back in the day (reaallly back) I was unable to get tahini very easily, so I came up with a substitute (the sesame oil). Sacrilege I know, but it still tastes great! I got so used to it I am now too lazy to get tahini, heh heh. You can certainly substitute if desired. My kids have loved it since they were little and used to call it "moose". They will inhale it by the bowlful. Serve with pita breads or as a side condiment for grilled meats. Extremely healthy and good for you as well (Even the olive oil is a monounsaturated fat - one of the best). I will sometimes even add more garlic and olive oil (I'm Cypriot in background which means you can never use too much olive oil...)"

  • In a food processor, combine lemon juice, garlic, cumin and about a quarter of the chickpeas, blend till smooth.
  • Add the remaining chickpeas, blend, add sesame oil and olive oil, blend, and add salt and pepper to taste. You might have to blend in batches depending on the size of your food processor - just divide ingredients by amount of batches.
  • Blend till smooth and creamy - my olive oil amount is approximate so add more or less for desired consistency.
  • Scrape into a serving bowl, sprinkle with cayenne and cilantro or parsley, and Kalamata olives if desired (not necessary, but they go killer with hummus).

  3. Sorry, this didn't work for us. Way too much lemon- we had to add a 4th can of chickpeas just to try to balance it out (didn't work).
     
  4. I love store-bought hummus, but this was absolutely awful. I don't know why, either. I was stoked about making it because it got such good reviews. I don't know what I could have done wrong, but I tried this and another recipe that was from Cook's Illustrated, and we hated each one. Back to store-bought for us!
     
  5. I too use sesame oil, I love hummus I add turmeric to my version, but i love how versatile hummus is sometimes I add red roasted pepper, and chopped steamed Kale....I have never tried it with cilantro, must give it a try ;)

  1. Oooooh, thank you very much for posting this recipe. Until I bumped into your recipe I did not ever think of making my own hummus and I bought it constantly....Then I saw this recipe and I actually had some sesame oil in the fridge from a recipe I made a time ago, so I threw it together and all I can say is YUMMMMM Thank you very much! I did substitute cilantro for parsley...I did not have any on hand, nor do I really like it. Excellent recipe.
