Very Yummy cake!! I love the pineapple in this. The coconut was a nice touch too, it makes you think "tropical". It was very moist, lots of flavor, I made it just as directed, didn't change a thing, but I baked it in 13x9 pan for about 45 minutes. Thanks for a great recipe, dale!

We loved loved LOVED this cake! I used pecans instead of walnuts but made the rest of the cake the same. My father was licking his fork when he got done! DH had 2 pieces too :) It was a big hit here and a new favorite!
We enjoy carrot cake and this recipe was even better with the pineapple and coconut. Love the cream cheese frosting and very summery, tropical flavors.
Very Good! 180 C was too low for my oven since 90 min. passed and the center was still "shifty", so I ramped it up to 250 for about 25-30 more min. For one who likes to eat warm cake and cookies right out of the oven, you must cool this cake overnight for it to live up to the prior reviews. If it isn't sufficiently cooled, it has a doughy flavor. The icing really is the best!
