This was really good! I used 12 oz. of green beans and used them as a bed for the potato salad. I subbed lemon for the verjuice and used just a tablespoon of the walnut oil. You could still taste its wonderful flavor, but I am sure more would be better if you aren't watching your fat intake. As DH said, you can't go wrong with potatoes, bacon and Greek yogurt!
A very good recipe that reminds me of a German hot potato salad my mom used to make. I made a half batch and, I used sour cream instead of yogurt, and white vinegar instead of verjuice. I also used only 1 tsp of olive oil (instead of walnut) in the dressing. I forgot the Parmesan! I will definitely make this again.
I cut the recipe in half for 2 of us. I used parmesan cheese, and a can of french style green beans. Sour cream was used also, and could not find verjuice.Had great flavor, and will keep this one. Made for 1-2-3 hit wonders.
Made for a light lunch for one. I only used 2 smaller potatoes, peeled and cubed, used 1 can of french style green beans. I have never heard of verjuice, so looked it up online and subbed vinegar and used sour cream in place of the yogurt. Loved the flavor of the beans and potatoes, great salad!!!! Made 2 servings using red potatoes, cream, and white wine vinegar for the verjuice. We also made our own walnut oil by simmering walnuts in the oil for about 8 minutes, then straining and allowed the oil to cool. This is a great winter potato salad and the dressing is wonderful.
An elegant and very sophistcated salad - okay, it IS sexy! I am so sorry that I only had frozen beans to hand, which lost their colour, but the combination of all the flavours was a winner for us. I used small new potatoes from the garden and left their skins on; as some were bigger than baby spuds, I cut them in to quarters or halves. We ate this with some Cajun blackened fish I had cooked for lunch; and the remainder of the salad we will have for our supper with French bread. Made for Newest Zaar Tag - thanks bluemoon downunder!
