I had never made or eaten Huevos Rancheros before so was unsure of the combination of salsa and eggs. I'm a convert now :) These were easy to make and looked so cool in the tortilla cups. We both really enjoyed this for brunch yesterday. Thanks so much for posting Bluemoon! Made exactly as written for ZWT5.

We enjoyed this. I followed the recipe exactly except I didn't have any lime juice. We used to live in south texas and this breakfast took us back. Thanks for a yummy breakfast that I know we will repeat. Made for gimme 5.

This was so good! I used black beans instead of kidney beans just because I can't stand them. I also added a little cilantro. I baked mine for about 15 minutes to get the eggs good and done. I don't like a runny or soft eggs at all. My kids really loved these. I think I'll add some breakfast sausage next time. We also used sour cream. This was a really nice breakfast for Sunday morning. What a fun way to make Huevos Rancheros. I used refried beans with chili and lime. After filling the tortilla cups I heated the rest of the bean mixture in the microwave for about 1 and 1/2 minutes then stirred in the lime juice and avocado. I really enjoyed the beans that way. I did not have big tins and used the regular size but I want to get bigger ones for the next time I make this. Great breakfast!

Made this for brunch this morning. I rated it a 5 and DH gave it a 3.75 so we met in the middle with a 4. I liked the crunchy part of the tortilla and he preferred the soft underside. Next time I will cook them only about 10 minutes as to give the yolk a softer texture as we prefer over easy and over medium. I did use a whole lime in our salsa as we like it alot. I personally will say that this is my favorite Huevos Rancheros I have ever had. Will be making this one again.

I scaled this recipe down for one. I used a whole grain tortilla. I didn't have large muffin pans, so just used regular size. I really liked it! Thanks so much!
