I learned how to make this from a Mexican neighbor when I lived in San Antonio, many years ago. It has always been an enthusiastic favorite of my sons.
- 8 ounces chorizo sausage (mexican style)
- 2 cups frozen diced potatoes
- 1 onion, chopped
- 8 eggs
- 8 flour tortillas
- 8 ounces cheese, shredded (cheddar or jack)
- salsa, to taste
- Remove the chorizo from the casing, break up and fry until crumbly. Remove with a slotted spoon, and set aside. Drain all of the grease except two tablespoons. Add the onions and potatos and fry until the onions are soft and the potatoes are slighty browned. add the chorizo back in the skillet along with the eggs and scramble until the eggs are set. Serve with tortillas and top with cheese and salsa.
Very easy, and very good - love the flavors that come from the chorizo sausage. The only thing I did differant was cut the amount in half for my small family and leave out the potatoes (it's a calorie thing and not a taste) this was DIL's first time having chorizo and I think with this recipe she's now a convert. Me, I loved the ease of putting it together. Made for ZWT8 the Mexico leg
A hearty and delicious breakfast. Everyone like it very much and had seconds. Thanks for posting this recipe. We will make it often.
Excellent, enjoyed by my family. Easy to make. Ingredients I normally have on hand. Served with the cheese and salsa. Thank You. Made for ZWT8.
