Huckleberry Preserves

"In Montana you wait for the huckleberries to get ripe, then you try to buy some to make this jam. They grow on West side of the Rockies. Then it is time for Jams, jellies, pies, ice cream, creams, it is a very small berry, dark purple to dark red and has a good taste."

Questions & Replies

  1. I followed this recipe to a tee and the lemon takes away from the huckleberry flavor. Can you use orange in stead or maybe more pectin?

  2. The recipe calls for 2/3 water, then the directions calls for more water in the stockpot? I have never did a waterbath for jam, is preserves different?Thank you, Fawn

  1. I just received two huge bags of what I think are huckleberries; found this recipe and added two vanilla beans to recipe. Came out wonderful and a really pretty color. Highly recommend this recipe!

  2. Really good, I like the hint of flavor from the lemon zest and juice.

  3. This was the best year I have seen for Huckleberries where I am from! This recipe is great! I left a few whole berries for texture. Very simple. Very good!

  4. Recipe misprint maybe? 1/3 cup lemon juice, 4 tea lemon zest? Might as well make lemon jam with purple food coloring. And the amount of sugar whoa, you might want to see someone about that sweet tooth you may have a sugar addition. Gave it a one because there is not a zero. Ruined half my crop trying this one.

  5. I always use this recipe for huckleberry jam. I modify it by only crushing half of the berries and all of my friends and family love it and can't wait for huckleberry season so I can make more

<p>My husband & I built our dream home after our children were raised. We didn't hire a contractor, we pounded every nail and board and shingle on it.I have lots of stories to tell about that adventure. My passion is cooking, my grandchildren and living each day like it were my last. I love to drive the big rigs. I lived all over the world for a time and collected dolls and cookbooks. I write poetry. My other passions are the outdoors, country living, the sunrises and sunsets,to give to others more than I receive as it says in the Bible. As I get older I am less judgemental.I hope I have helped someone each and every day.
