  • After removing seeds from pumpkin clean them up.
  • Soak them in salty water for about eight hours, drain on a paper towel and roast them on a baking sheet at 350° for 15 to 20 minutes.
  • Be sure to stir them frequently.
  • When you bite into them or crack them open, you'll find a tasty kernel inside.

  1. Stellar--the salt soak does wonders! I also appreciate the quick bake time (unlike another soak'n'roast recipe on here that called for 3-6 hours in the oven!). I use butternut squash seeds instead of pumpkin, since I rarely cook pumpkin.

  3. Usually I throw away my pumpkin seeds, but no more :) Ok it takes a little time to remove the pithy stuff around them, but once that's done, the roasting is easy and the result is tasty. I wasn't sure if Hubby would like these but he was steadily nibbling while they were still cooling and I had to ask him to stop at least long enough so that there would be enough left to take the photo LOL, Please see my rating system, a wonderful 4 stars :)Thanks!
