  • Wash and soak a pound of beans according to the directions on the package. Drain them and put them in a pot.
  • Cover them with water and cook them until they are tender, adding more water if necessary.
  • While the beans are cooking, saute chopped onions, minced garlic cloves, and jalapenos in olive oil. Add the vegetable mixture to the beans while they are cooking. Season with cumin, salt, and pepper.

  1. I love anasazi beans. This is pretty much how I make them, too. I added one 15 oz can stewed tomatoes and a 4oz can diced green chiles (in place of jalapenos). To me, the ham hock is not necessary. Sometimes, I also add 1/2 c rice toward the end of cooking and it is fabulous.<br/>Thanks for posting.
     
  2. Loved the Anasazi bean recipe. My husband told me about these wonderful beans. Can’t find them anywhere in S.C. ordered online and found your recipe. I add a ham hock and cooked them in instant pot. Delicious!
     
  3. Just made and added ham bone and some end of the honey baked ham. Also added some sliced jalapeños since I did not have a fresh one. Also added a can of rotes tomatoes and green Chile’s. Very yummy!
     
  4. Really tasty and great for a cold night. I sautéed 4 bacon slices and reserved 1 T. of the grease to use instead of the olive oil. I also added 3 chopped tomatillos.
