Hot Toddy Chicken Breasts

  • Cut the breast into 3 slices diagonally, put between plastic wrap and pound with a rolling pin until 1/4 inch thick.
  • mix the flour with salt and pepper and lemon zest. Toss the chicken in the flour and pat to remove excess.
  • heat half the butter and oil in a frying pan and saute half the chicken until golden.Remove from pan and repeat with the remaining oil and butter, fry the rest of the chicken.
  • return chicken to the pan, then add the whicky and heat for a minute, set alight, then keep cooking until flame dies down.
  • Stir in the lemon juice and honey, simmeruntil slightly thickened.

I live in a beautiful village on the island of Malta ( Europe) with my wonderful daughter, partner and two cats. I love the vineyards infront of my house or walking down to the valley of olive trees. ( I do pick olives every year) Some years ago I stopped working as a chef but still do a lot of home cooking. What I miss are the expensive ingredients I worked with, its rather hard cooking on a tight budget.
