Chitlin's are considered a delicacy (a special and desirable food) in South Carolina and other parts of the South. One of the great southern dishes. High in fat but pretty darn good!

Very good. I didn't use the chili pepper because I didn't want it too hot for my mother. I added some pig's stomach and smoked pig tails.

  1. Clean and wash chitterlings by pulling off the fat and debris.
  2. Soak in salted water to clean.
  3. Put chittlerings in water.
  4. Add garlic, onions, chile' pepper, vinegar, salt and pepper.
  5. Cook 3-4 hours.
