Hot Sausage Sandwiches

"I made this for a poker night I recently hosted. I tried a pan without tomato and found I prefered the sweetness they brought to the plate. If you are a cheese lover feel free to melt some provolone over the top."

  • 1.) Preheat either one large or two medium skillets to medium and cook the sausages until brown on all sides.
  • 2.) Remove the sausages and add the oil.
  • 3.) Add the peppers and onions and cook until peppers begin to soften.
  • 4.) Add the sausages back into the pan(s) and pour over the tomato sauce and chopped tomatos.
  • 5.) Cook until the sauce reduces and is no longer runny.
  • 6.) Serve on a toasted club roll.
