This is a wonderful way to fix quinoa. Quinoa is a gluten-free grain that is really high in protein. You can find it in healthfood stores, or in grocery stores with the grains.
- 2 cups quinoa, cooked
- 1 cup bacon
- 1⁄2 cup onion, chopped
- 1 (3 ounce) can green chilies, chopped
- 1 cup vegetable broth
- Chop bacon, put in skillet with onions and cook well.
- Drain, add quinoa, green chili and broth.
- Cook on medium heat until broth is absorbed.

Very good recipe.I did use dehydrated jalapenos instead of green chilies though. Just put them in with the broth. We really enjoyed this. Thanks for a great recipe that will be made many times!
