"I was searching for an easy German potato salad and came across this one in an old 1966 Better Homes and Garden Paperback recipe book I own. It was so good I thought I'd share it."

ingredients

¹⁄₂ lb bacon (save 1/3 cup drippings)
¹⁄₃ cup vinegar, plus
water, to make 1/2 cup
1 slightly beaten egg
1 teaspoon sugar
1 teaspoon salt
¹⁄₄ teaspoon pepper
5 cups diced cooked potatoes
¹⁄₂ cup chopped onion

directions

Cook bacon crisp: crumble.
Combine 1/3 cup bacon drippings with Vinegar/water, egg, sugar, salt, and pepper.
Heat and stir till thickened.
Add potatoes, onio and bacon: toss, heat through.
