Hot Milk Cake

1 cake
ingredients
- 3 eggs
- 1 cup sugar
- 1⁄2 teaspoon vanilla
- 1 1⁄2 cups all-purpose flour
- 1 1⁄2 teaspoons baking powder
- 1⁄4 teaspoon salt
- 3⁄4 cup milk (2 1/2 minutes in microwave at HIGH)
- 2 tablespoons butter
directions
- Heat the milk until it's boiling (2 1/2 minutes in microwave at HIGH). Add the butter. Set aside.
- In another bowl, beat the eggs and add the sugar in small quantities.
- In a bowl, sift the flour, baking powder, salt and add to egg mixture.
- Pour the hot milk to the egg mixture-flour and add the vanilla. With a mixer, mix well until smooth.
- Pour the batter in an ungreased tubular pan.
- Cook in the oven at 350 F for 45-50 minutes until golden.
- It could be 2 round pans.
- If you double the recipe, cook in a rectangular pan 45 minutes.

The cake was well received by my guests even though it's form wasn't quite what I had planned, lol. For some reason mine stuck very well and truly to the pan. There was no was it was going to come out looking like a pretty cake should. I had company and wanted to serve something (and knew the company well) so I dug it out and cut it into cubes. These went into a a csserole dish and the brown sugar glaze I made was drizzled over. I just put out the dish with a serving spoon, bowl and forks for a serve yourself presentation. They loved it! Who'd have guessed? The cake is very easy and quick to make with a great taste. I used hazelnut extract in place of the vanilla and as I said a brown sugar glaze. Just so those that know me will know *wink*- I used whole eggs, real sugar, whole milk and butter as it was intended for DH. Thanks for being a good sport about posting these pix Boomie.

Loved how easily this cake came together. It made a a wonderful bundt cake for my grandson's 3rd birthday. A dense consistency that holds up well when slicing. I made a thin cocoa frosting and drizzled it down the sides. Made for 1-2-3 Hit Wonders ~~ This is a hit in my books Boomette! (4/14 - This was supposed to be a 5 star but somehow recorded the 1st time as 4 - I've adjusted it to what I intended during my first review!)
