So quick and easy that it really isn't even a recipe. You can have warm cereal on a cold day without any muss or fuss. I have added fresh fruit (blueberries are a favorite) after heating the cereal. Brown sugar could be subbed for the honey. Or, eliminate the extra sweetener and use vanilla soy milk instead of regular milk. The possibilities are endless.
- Combine cereal and milk in a microwavable bowl.
- Drizzle with the honey.
- Microwave on High to taste: 30 seconds for a BIG crunch; 60 seconds for a little crunch.
This is a good, fairly easy recipe for making your own grape-nuts. I've tried several recipes for homemade grape-nuts, and this is the best I've found. There's no need for expensive graham flour like a lot of other recipes insist on. I find this recipe is too sweet for our taste though--I use only 1 or 2 cups of brown sugar, not packed, rather than 3 cups of packed. Also I've found the recipe works just fine with regular milk, so you don't have to use buttermilk. Also, as with any homemade cereal like this, the key is to toast it just right. Don't try to rush them by turning the oven up; that can make them taste burned. Also you don't want to take them out too soon, or they'll have a disappointing texture--not really hard, but kind of hard to chew, almost soggy in a way, and unappealing. Instead, each time you take them out of the oven to stir them in the cookie sheets, check them--they're done when they have a nice light crunch and a sort of caramely sweetness.
I followed the recipe directions using a Fire King bowl covered in saranwrap, and nuked it for 60 seconds. A lot of the milk boiled off, and the saranwrap shrunk down on top of the cereal. The cereal was very viscous, almost like toffee nuggets. I added more milk and nuked it again for 15 seconds. It was very tasty -- no crunch, but chewy. Be aware that the Grape Nuts expand a lot as they absorb the milk and honey. I'd say a quarter cup of cereal from the box makes 1.25 cups of warm cereal.
