  • Pare and cook potatoes til tender 30-35 minutes Drain and set aside.
  • In a large skillet, fry bacon til crisp. remove and drain.
  • Cook and stir chopped onion in bacon drippings til tender and golden.
  • Stir in flour, sugar, salt, celery seed and pepper.
  • Cook on low heat, stirring til bubbly.
  • Remove from heat.
  • Add water and vinegar.
  • Heat to boiling, stirring constantly.
  • Boil and stir for one minute.
  • Remove from heat.
  • Crumble bacon and slice potatoes.
  • Carefuly stir bacon and potatoes into hot mixture in skillet.
  • Heat thoroughly, stirring lightly to coat potato slices.

  1. Do you remember the source of this recipe? I have an almost exact same recipe, minor changes in amounts, and have made it. The first time I made it was for a potluck lunch at work. It was easy and didn't seem all that spectacular. However, my coworkers kept coming back for 2nds! Much to my surprise! I kept it warm in a crockpot on my desk and it was gone within the first 20 minutes of lunch. So I kept the recipe and have used it many times esp for potlucks. I have to admit, it produces a flavor you don't expect from the ingredients list!

i live in rural canada. i love to cook, penpalling, hockey,music, and wwe wrestling. also am a avid fishermen as well. my grandmother who was a great cook and baker (she owned and operated a bake shop for years) was my biggest inspiration for me learning to cook and bake.
