  • In a saucepan, cook cream over moderately-high heat, being careful it doesn’t boil over, for 15 minutes, or until reduced to 1 ½ cups.
  • Whisk in brown sugar until smooth and remove from heat.
  • Add chocolates and stir until melted.
  • Whisk in butter until smooth; add rum.

  1. Ev, I am soooo sorry! I forgot to rate this! It was a tag eons ago. It is really good. I followed your directions exactly. A great topping for chocolate ice cream. I think the rum adds that extra something special. This will be my stand by dessert topping from now on. Is it freezable?
     
  2. Oh Man!! One look at these incredible ingredients and I knew this would be one awesome sauce! I proved myself correct with one taste. I have plans to serve this over Bluemoon Downunder's Croissant Bread & Butter Pudding recipe #152729, over cream cheese pound cake, vanilla or chocolate homemade ice cream, and cheesecake!! I think I will be looking for just about any opportunity to serve it in the future! This is a great fudge sauce, Evelyn! Thanks so much :)

I moved out here many, many years ago from Ottawa, Canada - so I am blessed in having two wonderful heritages! I suffer from compulsive obsessive behaviour with regard to food and my psychiatrist thought it would be a good idea to find a 'society' where many have the same problem and try to find a cure. So far, I've copied a couple of thousand recipes from this site and my psychiatrist has thrown the towel in and refuses to answer the phone when I call. What did I do wrong? Got 3 kids that keep me on the go - 10 and under at this point (2008) - I may not get round to updating this for a few years, so you'll have to do your own maths. I teach English full-time and Greek Cookery part-time. I would like to make the cooking part of it full-time and the English Grammar part of it part-time. That's all for now.
