Hot Dog Casserole

This was a favorite of mine as a child. I don't know where the idea came from but it became a staple.

• Prep Time: 30 mins
• Cook Time: 30 mins

Ingredients:

Servings: 6

• 10 hot dogs (1 lb)
• 6 medium potatoes
• 1 small onion , diced
• 1 medium bell pepper , diced
• 3 celery ribs , diced
• 3 cups cheese (shreaded velveta)
• ¼ cup spicy mustard
• ½ cup mayonnaise
• ½ teaspoon black pepper

Directions:

1. Peel , dice and boil potatoes in salted water.
2. Slice hotdogs into 1 inch pieces.
3. In a casserole dish, mix potatoes, onions, celery, bell pepper, mayonnaise, mustard and 2 cups of cheese.
4. Arrange hot dog pieces over top of casserole.
5. Top with reserved cheese.
6. Place in the oven at 350 for 30 minutes.
