  • 1 12 cups unsweetened cocoa
  • 1 14 cups sugar
  • 6 ounces semisweet chocolate, coarsely chopped
  • 14 teaspoon salt

directions

  • In food processor, with knife blade attached, blend cocoa, sugar, chocolate, and salt until almost smooth. Store in tightly sealed container at room temperature up to 6 months.
  • To Make: For each serving, in a microwave-safe mug, mix 3 tablespoons Cocoa Mix with 1 cup mil, microwave on HIGH 1 1/2 - 2 minutes or until blended and hot, stirring once. Swirl a dollop of whipped cream on top.
  • Mocha Variation: Prepare cocoa mix, adding 1/3 cup instant coffee powder or granules before blending in processor.
  • Mexican Spice Variation: Prepare cocoa mix, adding 2 teaspoons ground cinnamon and 1/4 teaspoon ground red pepper (cayenne) before blending in processor.
  • Vanilla Variation: Prepare cocoa mix, adding a half of a vanilla bean (pod and seeds) before blending in processor.

  1. I made the Mexican variation. There was a lot of chocolate in this (a good thing) and I couldn't taste the cinnamon or cayenne. Next time, much more cayenne. I also used non-fat dry milk in the mix to make it easier to make. Made for variety is the spice of life 2014.
     
  2. First, just to get the basic's out of the way, I used Splenda in place of the sugar. Also dark cocoa, bittersweet chocolate then added coffee, cayenne and a piece of vanilla bean. What can I say, they all sounded good so I used most options. The outcome is a total yum. Oh yeah, I made a half amount but I think I'll be making this again. Made for Variety is the Spice of Life 2014.
     
  3. Halfed the recipe as we don't drink hot chocolate that often but thought it'd be great to have around when my nephew and grandsons come to visit. Made and very much enjoyed the Mexican Spice variation. The cayenne gave it a pleasant kick that I liked. Made for 2014 Variety is the Spice of Life
     
  4. I tried the original, the Mexican variation and the Mocha variation, and I do have to say that I like all three, but the Mexican variation a great deal. I never knew cayenne pepper can go so well with hot chocolate! I've heard it did, but was amazed to find out how good it was. Mocha was also real good, and a real treat!
     
  5. Delicious hot cocoa Internetnut. I made the Mocha version but added 1/2 a vanilla bean to the mixture. I used Jamaican Mountain Peak instant coffee and coarse sea salt in this recipe, they worked beautifully adding a nice dark layer of flavor. Thank you so much for sharing your wonderful recipe which I will enjoy again and again. Made for Variety is the Spice of Life Event....May 2014.

She was a wonderful cook and baker and taught me many things and the most valueable things was how to be a wonderful cook and baker like her. I really love collecting different cookbooks. I have over a 100 and growing! I collect mostly Taste Of Home &amp; community cookbooks. I'm a part time college student studing Early Childhood Education, but taking time off and hoping to return soon.
